Tofu Scramble Breakfast Tacos
Ingredients
- 10 Corn Tortillas
- 16 oz of Tofu
- 8 oz of Black Beans
- 1 Avocado
- 1/2 cup of Feta Cheese
- 4 Scallions
- 1/2 pint Grape Tomatoes
- 2 Cloves Garlic
- 1-2 tablespoons of oil

Preparation

1. Heat 1-2 tablespoons of oil in a skillet over medium heat. Add garlic and scallion whites; cook until tender, stirring frequently for about 2 minutes.
2. Season with 1 teaspoon of salt & pepper, 1 teaspoon of red pepper flakes. Continue stirring for about 1 minute. You can vary the amount of red pepper flakes based on your preference of spice.
3. Stir in beans and tofu and stir until heated thoroughly. Once cooked through, remove from heat.
4. Add 1/2 tablespoon of olive oil to a pan over medium heat and toast each side of your tortillas. Cook longer for a crunchy texture or less of a softer chewy texture.
5. Serve tortillas filled with tofu scramble, avocado, and Feta cheese, dividing evenly.
Make this dish vegan by removing the cheese. This recipe yields about 8-10 tacos
