Sweet Potato Stuffed with Turkey Burger Mash

Sweet potatoes, we love 'em. They are high in fiber, packed with vitamins, and they regulate blood sugar which helps calm the sweet tooth. Here, we've loaded sweet potatoes with a delicious turkey burger recipe and topped them with cheese. It's good, real good. Serves 2

Ingredients

  • 2 Sweet Potatoes
  • 1 lb ground Turkey
  • 6 oz shredded Mozzarella
  • 1/2 Red Onion
  • 4 Green Onions
  • 4 cloves Garlic
  • 1 tablespoon Paprika
  • 1 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper

  • 1 bunch Green Onions

Preheat oven to 400°F.

1. Wash each sweet potato, then make a slit about 1/3 way through the center of each. Wrap in foil (leaving room to steam) and bake for 40 minutes.

2. While potatoes bake, dice or mince vegetables. Make sure turkey is thawed.

3. In a large pan add 2 tablespoons of olive oil over medium heat, add vegetables, sauté until fragrant, about 5 minutes. Add turkey, salt, pepper, cumin, & paprika. Stir until cooked through. Remove from heat.

4. Remove potatoes from oven, divide turkey burger mixture between potatoes. Top with shredded mozzarella, then bake for 10 more minutes until cheese is melted.
