Sriracha Bacon Breakfast Tacos
Sriracha + Bacon + Brown Sugar = Awesomeness. This is another simple recipe that will blow your taste buds away. These tacos will be a breakfast or lunch favorite. Try them out for yourself and tell us what you think. Makes 5 tacos
Ingredients
- 8 slices of Turkey Bacon
- 6 eggs
- 10 Corn Tortillas
- 2 Roma Tomatos
- 1/2 cup Shredded Cheddar
- 1/2 cup Cilantro
- 1/2 Red Onion
- 1 Avocado, sliced
- 1 tablespoon Sriracha
- 1/4 cup Brown Sugar

Preparation

Preheat oven to 400° F.
1. Separately place 8 slices of turkey bacon onto a rack or aluminum foil lined cookie tray. Mix together 1/4 cup of brown sugar and 1 tablespoon of Sriracha to create a paste. Brush Sriracha paste onto both sides of your bacon, then put in the oven for 10 minutes or until crispy.
2. Dice 1/2 red onion, 1 jalapeño (stems and seeds removed), and 1/2 cup of cilantro to create a pico de gallo which will top your tacos.
3. Whisk together 6 eggs. In a sauté pan over medium heat add 1 tablespoon of oil then add in eggs and scramble until cooked through. Set eggs aside.
4. Wipe down pan and add in 3 tortillas. Cook until crispy then add 3 more and continue until all 10 tortillas are cooked.
5. Remove bacon from oven. Dice and combine with the scrambled eggs, spoon mixture onto tortillas. Top with pico de gallo and enjoy.
Leftover ingredients will be: Jalapeños, 1/2 red onion, cheese, and a little cilantro. Connect these ingredients with other dishes below.
