Turkey Stuffed Paleo Peppers
Ingredients
- 1 lb ground Turkey
- 6 Bell Peppers
- 1/2 bunch Green Onions
- 1/2 Red Onion
- 1 pint Mushrooms
- 1 Sweet Potato
- 4 oz Tomato Sauce
- 3 cloves Garlic
- 2 tablespoons Olive Oil
- Salt & Pepper

In the video we stuffed whole peppers but you can halve them and stuff them that way as well. Check the photo below.
1. Remove tops of each pepper, set aside. If peppers can't stand on their own, you can slice them side ways and fill each half.
2. Slice 1/2 bunch of green onions, mince 3 cloves of garlic, slice the entire package of mushrooms, dice half of a red onion, cube 1 sweet potato (in small 1/4 inch cubes, leaving the skin on). In a large saucepan, heat 2 tablespoons of olive oil over medium heat then add all of your chopped veggies. Sauté until tender.
3. In a medium pan heat 2 tablespoons of olive oil over medium heat and brown the turkey. Add to the veggie sauté. Add the entire can of tomato paste with your veggies and turkey mixture. Let it reduce until mixture has a chunky, thick consistency.
4. Stuff peppers. Bake for 15-20 minutes at 400°F.
Leftover ingredients: Half red onion, garlic, and a few green onions. Connect these ingredients with other dishes below.
