Cauliflower Crust Bruschetta Pizza

This healthy alternative to pizza will blow your mind. Crispy, light and incredibly flavorful. We apologize to Pizza Hut and Dominos because this pie brings some serious competition. Serves 2

Ingredients

  • 1/2 head of Cauliflower
  • 1/2 pint Grape Tomatoes
  • 2.5 oz of Parmesan
  • 1 Egg
  • 10 Basil Leaves
  • 3-4 cloves of Garlic
  • 1 Tbsp Balsamic Vinegar
  • 1/4 cup Olive Oil
  • Salt and Pepper

  • 5 oz of Parmesan
  • 6 Eggs
  • 1 bunch of Basil

Preparation

Please watch the short video above to see how it’s done. This recipe calls for half a head of cauliflower. You get enough ingredients to make 2 pizzas.

Preheat oven to 450˚ F.

1. Grate raw cauliflower on the coarse side of the grater. Cover and microwave for 3 minutes. Remove cauliflower and add 1 egg and 1/2 cup Parmesan cheese. Salt and pepper to taste.

2. Spray or wipe canola oil (or olive oil) generously on a 12” pizza tray. Flatten cauliflower mixture to form pizza base. Bake in oven for 45 minutes.

3. Heat 2 tablespoons of olive oil over medium-high heat in a small skillet. Mince 3-4 cloves of garlic (depending on size & taste) and stir into oil, lightly frying for about 1 min until golden brown. Pour into a mixing bowl and allow to cool slightly. Julienne about 10 basil leaves. Add tomatoes, balsamic, basil along with salt and pepper to taste into the bowl. Toss to combine.

4. Remove cauliflower crust and let it cool for a moment. Add the tomato basil salad. Cut into 6 slices.

Leftover ingredients will be: Half a cauliflower, garlic, and eggs. You have enough to make another pizza or connect these ingredients with other dishes below.
