Spinach Mozzarella Breakfast Frittata with Red Onions & Tomatoes
This is a great way to start off your morning. Sautéed red onions with mozzarella, eggs, spinach, and tomato is just delicious. Serves 2-4

- 6 eggs
- 8 oz shredded Mozzarella
- 5 oz Spinach
- 1 Red Onion
- 1 large Tomato
- 2 tablespoons Olive Oil
- 1 oz Parmesan (optional)
- Salt and Pepper

Preheat oven to 425° F.
1. Dice one large red onion, mince 3 cloves of garlic, roughly chop 5 oz of baby spinach and set them all aside.
2. Whisk 6 eggs until a uniform yellow color. In a sauté pan bring 2 tablespoons of olive oil to medium heat. Add onions and garlic then cook until tender. Add in spinach and sauté until spinach is wilted. Season with salt and pepper.
3. Add in the eggs evenly distributing it throughout the pan. Top with 8 oz of mozzarella cheese and 5 slices of tomato (you can use more or less tomato if you’d like). Put in the oven for 10-12 minutes.
4. Remove from oven, top with parmesan cheese (optional) and serve immediately.
