BBQ Meatloaf with Cauliflower Mash & Simple Salad
Ingredients
- 1 lb of Grass-Fed Ground Beef
- 4.5 tablespoons of BBQ Sauce
- 1/2 cup of Panko
- 1 Head of Cauliflower, cut into florets
- 1/2 Bunch of Kale, chopped
- 1 Red Pepper, sliced
- 3 Cloves of Garlic
- 2.5 teaspoons of Worcestershire Sauce
- 1 teaspoon of Dijon Mustard
- 1 teaspoon of Salt & Pepper SALAD DRESSING
- 1/4 Cup of Apple Cider Vinegar
- 1 teaspoon of Salt
- 1 teaspoon of Dijon Mustard
- 2 cloves of Garlic
- 3 tablespoons of Honey
- 3/4 cup of Olive Oil

Preheat oven to 350°F
1. In a bowl mix thawed ground beef, Worcestershire sauce, bbq sauce, dijon, garlic, salt & pepper.
2. On a lined baking sheet (use tin foil for easy clean up), mold the meat mixture into a loaf shape. Note: Don't over work meat or pack too tight or you'll have a dense loaf. Bake at 350°F for 30-35 mins.
3. Cut the stem from cauliflower, then cut the florets into bite sized pieces. Boil in about 6 cups of salted water until soft. Drain then set aside..
4. Remove kale from ribs and roughly chop. Slice red pepper in long thin slices then add dressing (you can use our Dijon dressing or any kind you'd like).
5. Remove meatloaf from oven, let it rest for 5 mins. Mash cauliflower with 1-2 tablespoons of butter, then salt & pepper to taste.
