Sweet Potato with Wilted Spinach & Avocado

The combination of avocado, lemon and sweet potato creates a surprisingly delicious flavor, plus it's high in fiber and low in calories. Serves 2

Ingredients

  • 2 Sweet Potatoes
  • 1/2 Onion, sliced
  • 5 oz bag of Spinach
  • 1 Avocado
  • 1 Lemon
  • 2 tablespoons of Olive Oil
  • Salt & Pepper

Preheat oven to 425° F.

1. Poke each potato multiple times with a fork creating holes for the potatoes to vent. Wrap each sweet potato in foil with a little room for steam. Put in oven for about 40 minutes or until tender and cooked through.

2. Meanwhile, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add sliced onion and a little salt & pepper and cook about 6 minutes, stirring occasionally, until tender (in the video we used white onions but red or yellow work just fine too). Add spinach and cook, stirring, until wilted, about 5 minutes.

3. Remove potatoes from oven, let cool for about 5 minutes, then slice halfway through. Top each with the greens and sliced avocado. Season with red pepper flakes and sprinkle with a little salt & pepper. Squeeze lemon on top before serving.
